Tailgating Recipe – Pinwheels! Mealtime Monday

Not only are these pinwheels easy and yummy, they can, quite literally, be made right on your tailgate!
It’s true! To prove this point I actually prepared these pinwheels tonight, not on a tailgate, but on the coffee table in my hotel room – no oven, no fancy appliances, not even a microwave! I went to the grocery store and bought the items you see in the image below, and using an inexpensive cutting board, sharp knife and some plastic cutlery I went to work. It’s that easy!

Veggie Ranch Pinwheels

Ingredients: Veggie Ranch Pinwheels

- Flour Tortillas
- 1 pkg. Cream cheese, softened to room temperature
- 1 packet ranch dressing mix
- 1 small bag fresh broccoli and cauliflower florets with carrots
Directions:
- Finely chop the vegetables, the smaller the pieces the better they stay in the pinwheel.
- Spread cream cheese on the tortilla clear to the edges, being careful not to tear the tortilla.
- Sprinkle 1 teaspoon of the ranch seasoning over the cream cheese.
- Sprinkle veggies generously over cheese.
- Roll up tightly.
- Let sit, seam side down, for 10 minutes.
- Carefully slice roll in 1 inch thick pieces, discarding the very ends, and place on serving dish.



Jalapeno Popper Pinwheels

Ingredients: Jalapeno Popper Pinwheels

- Flour tortillas
- 1 pkg, cream cheese, softened to room temperature
- 1 jar cheese sauce
- 1 can diced jalapenos, or one jar sliced. (If sliced you will need to dice them)

Directions:
- Spread cream cheese on the tortilla clear to the edges, being careful not to tear the tortilla.
- Spread cheese sauce lightly over the cream cheese, staying away from the very edges of the tortilla.
- Sprinkle the jalapenos evenly over the cheese layer.
- Roll up tightly.
- Let sit, seam side down, for 10 minutes.
- Carefully slice roll in 1 inch thick pieces, discarding the very ends, and place on serving dish.

Buffalo Chicken Pinwheels

Ingredients: Buffalo Chicken Pinwheels

- Flour tortillas
- 1 large can of white meat chicken, drained (will do about 2 rolls)
- 1 bottle of buffalo sauce for hot wings
Directions:
- Spread a light layer of buffalo sauce over tortilla, going all the way to the edges.
- Break up the chicken and spread it over the sauce, stopping about 1 inch form the top edge of the tortilla.
- Drizzle a little more buffalo sauce over chicken and roll up tightly.
- Let sit, seam side down, for 10 minutes.
- Carefully slice roll in 1 inch thick pieces, discarding the very ends, and place on serving dish.
PB&J Pinwheels
Ingredients: PB&J Pinwheels (Your littles’ will like these!)

- Four tortillas
- Creamy peanut butter
- Jelly (not jam) I used grape.
Directions:
- Spread one tortilla all the way to the edges with peanut butter.
- Lay another tortilla on top of the peanut butter.
- Spread the 2nd tortilla with a thin layer of jelly, staying away from the edges. Careful – too much jelly and it will ooze all over when you roll it up.
- Roll up tightly.
- Let sit, seam side down, for 10 minutes.
- Carefully slice roll in 1 inch thick pieces, discarding the very ends, and place on serving dish.
