Mealtime Monday– Fajita Stuffed Chicken

I’ve got to start by telling y’all that these past few weeks have been rough. And I mean rough! All is fine and dandy, and you have no need to worry about us. The only reason I tell you this is because it means that I have unfortunately not been in the kitchen much. So, for this Mealtime Monday, I am linking you to a recipe that we tried (with guests over I might add) and it was a HUGE hit! Seriously, such a big success and healthy too! The best part, it was topped with some melted, golden cheese. Who doesn’t love cheese right?!? I can tell you we sure do. Anything with cheese, we will give a try. So without further ado, here it is Fajita Stuffed Chicken. Give it a try! You won’t regret it!

A few things I would recommend:

  • Slice the chicken open as it instructs. With it open, pound it out a little bit so that it is flat(ish). I found mine took forever to bake because they were so fat. Worth the wait, but this may speed it up a tad for you.
  • Add some fajita seasoning to the chicken as well. The chicken doesn’t have much flavor if you get a bite of it by itself.
  • Last, line your pan with some parchment paper of tin foil. Clean-up will be a million and one times easier (I learned the hard way).
